Apple Pecan Cornbread Stuffing

My favorite Thanksgiving recipe.

serves a lot of people.

Ingredients:
  • 1 onion, diced
  • 1 cup celery (optional)
  • 3/4 cup butter
  • 9x9 pan of day-old cornbread, cut into cubes
  • 2 cups bread crumbs (I take 4 wheat bread slices, cut them up and toast them in the oven for 5 minutes)
  • 2 cups apples, diced
  • 1 cup pecans, chopped
  • 1/2 tsp salt
  • 1/2 tsp each of whatever spices/herbs you want to use - ground ginger, cinnamon, ground cloves, parsley, sage...
  • 1 cup apple juice
  • 1 cup chicken broth
  • 3 eggs, beaten
Directions:
  • In a saucepan, melt the butter and saute the onions and celery until just undercooked.
  • Mix together all of the other dry ingredients and apples.
  • Mix in the onion-butter mix and the juice, broth, and eggs. Don't overmix
  • Put in a baking pan or casserole dish and bake for 30 minutes.
