Ingredients:
- 1 onion, diced
- 1 cup celery (optional)
- 3/4 cup butter
- 9x9 pan of day-old cornbread, cut into cubes
- 2 cups bread crumbs (I take 4 wheat bread slices, cut them up and toast them in the oven for 5 minutes)
- 2 cups apples, diced
- 1 cup pecans, chopped
- 1/2 tsp salt
- 1/2 tsp each of whatever spices/herbs you want to use - ground ginger, cinnamon, ground cloves, parsley, sage...
- 1 cup apple juice
- 1 cup chicken broth
- 3 eggs, beaten
- In a saucepan, melt the butter and saute the onions and celery until just undercooked.
- Mix together all of the other dry ingredients and apples.
- Mix in the onion-butter mix and the juice, broth, and eggs. Don't overmix
- Put in a baking pan or casserole dish and bake for 30 minutes.
