2 heads sweet gem(red romaine works well, too), washed and cut into 1 inch squares
4 oz smoked gouda or smoked cheddar, shredded
½ cup toasted pumpkin seeds
1 ripe avocado, diced
½ of one chipotle in adobo sauce
½ cup lime juice
1 cup canola oil
3 Tablespoons chopped parsley
3 Tablespoons chopped chive
Salt and Pepper
1. Combine lime juice and chipotle in a blender and blend smooth. Once smooth, slowly add oil while blender is still running.
2. Combine all ingredients, except avocado and dressing in a large bowl.
3. Add the dressing, ½ cup at a time tossing well each time, until properly dressed. Season to taste.
4. Place in serving bowls and top with avocado.
