Jalepeno Cheddar Corn Muffins

Had these at Google, but I haven't tried the recipe yet. If they turn out anything like the Google ones, I'd eat 30 of them :)

serves 12

Ingredients:

  • 1 cup cornmeal
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2-1/2 tablespoons sugar
  • 1 teaspoons salt
  • 1 cup buttermilk
  • 2 eggs
  • 1/4 cup melted butter
  • 5 ounces shredded sharp cheddar cheese
  • 1/4 cup frozen corn kernels (optional)
  • 2 jalapenos, seeded and minced
Directions:
  • Preheat oven to 400°F
  • Spray muffin tins with PAM
  • Combine eggs, buttermilk, and melted butter in a bowl
  • In another large bowl, combine all the dry ingredients and whisk together to blend
  • Add the shredded cheese and corn kernels to the dry ingredients
  • Add the wet ingredients and mix gently, until everything is moist (do not over mix)
  • Fill muffin tins about 3/4 of the way full
  • Bake for about 25 minutes or until brown
