Mini-Frittatas

This will make a week's worth of breakfast! Try these if you're running out the door every morning...like me! Store cooked frittatas in the fridge and microwave when ready to eat.

Ingredients
5 eggs
2 diced tomatoes
1/2 diced onion
1/2 cup feta cheese
4 slices cooked and chopped bacon (I like smoked salmon!)
Salt and Pepper

Directions
1. Preheat oven to 375 degrees.
2. Beat the eggs then add tomatoes, onions, cheese and bacon. Add salt and pepper.
3. Coat muffin pan with cooking spray. Divide the mixture among 12 muffin cups.
4. Bake until golden or for 11 minutes.
